2 ripe avocados

1 cup cherry tomatoes, diced

1/2 cup cooked quinoa

1/4 cup red onion, finely chopped

1/2 cup black beans, rinsed and drained

1/4 cup corn (fresh or frozen)

1/4 cup feta cheese, crumbled

2 tbsp fresh cilantro, chopped

2 tbsp lime juice

1 tbsp olive oil

Salt and pepper to taste

Optional: a pinch of chili flakes for heat

Instructions
 

Prepare the Avocados: Cut the avocados in half lengthwise and carefully remove the pit. If needed, scoop a small amount of flesh from the center to create a larger cavity for the filling.

    Mix the Filling: In a large bowl, combine the diced cherry tomatoes, cooked quinoa, red onion, black beans, corn, feta cheese, and cilantro. Stir gently to combine all ingredients.

      Dress the Salad: In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and optional chili flakes. Pour this dressing over the quinoa mixture and toss lightly to coat everything.

        Fill the Boats: Spoon the filling into each avocado half, generously packing it in and allowing some to overflow for an appealing presentation.
