4 large spinach tortillas or wraps

1 ripe avocado, mashed

8 slices of crispy bacon, cooked and drained

2 cups fresh baby spinach leaves

1 large tomato, sliced

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon lemon juice

Salt and pepper to taste

Optional: Red pepper flakes for a spicy kick

Prepare the Spread: In a small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Adjust seasoning according to taste. Set aside.

    Lay the Wraps: Place the spinach tortillas on a clean surface or cutting board. Divide the mashed avocado evenly among the tortillas, spreading it over the entire surface (leaving about an inch from the edge).

      Layer the Ingredients: On top of the avocado spread, layer 2 slices of crispy bacon per wrap. Follow by adding a handful of baby spinach leaves and a few slices of tomato.

        Add the Spread: Drizzle the prepared mayo mixture over the layered ingredients for an extra creamy flavor.

          Wrap it Up: Fold the sides of the tortilla inward and then roll tightly from the bottom up, ensuring all fillings are secured inside.

            Slice and Serve: Cut each wrap in half diagonally and serve immediately, or toast them in a non-stick skillet for an added crunch!
