  • 1.0 teaspoon ground cumin
  • 1.0 teaspoon ground cinnamon
  • 0.5 teaspoon nutmeg
  • 0.0 to taste salt
  • 0.0 to taste pepper
  • 2.0 tablespoons olive oil
  • 0.0 for garnish fresh parsley or pumpkin seeds

Instructions
 

  • Sauté Veggies: In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent. Add the minced garlic and diced carrots, cooking for another 2-3 minutes until fragrant.
  • Incorporate Pumpkin: Stir in the pumpkin puree and cook for an additional 2 minutes, allowing it to warm up and blend with the vegetables.
  • Add Broth and Spices: Gradually pour in the vegetable or chicken broth while stirring. Add ground cumin, cinnamon, nutmeg, salt, and pepper. Bring the mixture to a boil.
  • Simmer: Once boiling, reduce the heat and let it simmer for about 15-20 minutes, allowing the flavors to meld together.
  • Creamy Texture: Stir in the coconut milk (or heavy cream) and cook for an additional 5 minutes. If you prefer a smoother soup, you can blend it with an immersion blender until desired consistency is reached.
