2 boneless, skinless chicken thighs

4 cups chicken broth

2 packages of ramen noodles (discard seasoning packets)

1 cup shiitake mushrooms, sliced

1 medium carrot, julienned

1 small zucchini, julienned

3 green onions, chopped (white and green parts separated)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon ginger, minced

2 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon chili garlic sauce (adjust for spice preference)

2 boiled eggs, halved

Fresh cilantro for garnish

Sesame seeds for garnish

Prepare the Chicken: In a medium-sized pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant. Then, add the chicken thighs and sear on each side until golden brown (about 3-4 minutes per side).

    Build the Broth: Pour in the chicken broth, soy sauce, rice vinegar, and chili garlic sauce. Bring to a gentle simmer. Cover the pot and let it simmer for approximately 15-20 minutes or until the chicken is cooked through (internal temperature of 165°F/75°C). Remove the chicken from the pot, shred it, and set aside.

      Cook the Vegetables and Noodles: In the same pot of broth, add the sliced shiitake mushrooms, julienned carrots, and zucchini. Let them simmer for about 5-7 minutes until tender. Meanwhile, in a separate pot, cook the ramen noodles according to the package instructions, then drain and rinse under cold water to stop the cooking process.

        Combine: Add the cooked ramen noodles to the pot with the broth and vegetables. Gently stir to combine and ensure everything is heated through. Taste the broth and adjust seasoning with more soy sauce if needed.
