Ingredients

4 boneless, skinless chicken breasts

1 cup apricot preserves

2 tablespoons Dijon mustard

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

1 tablespoon olive oil

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Apricot Glaze: In a medium mixing bowl, combine the apricot preserves, Dijon mustard, soy sauce, apple cider vinegar, garlic powder, onion powder, black pepper, and salt. Stir until the mixture is well-combined and smooth.

Prepare the Chicken: In a large baking dish, drizzle olive oil to coat the bottom. Place the chicken breasts in the dish, ensuring they are evenly spaced.

Add the Glaze: Pour the apricot glaze over the chicken breasts, ensuring they are fully covered in the sauce. You can use a brush to spread it evenly if desired.

Add Fresh Herbs: Sprinkle the fresh thyme over the chicken for an added burst of flavor.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C) and the glaze is bubbling.

Rest and Serve: Once cooked, remove the dish from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving.

Enjoy!: Serve hot alongside your favorite sides, such as roasted vegetables or rice, and enjoy the sweet and savory flavors of your Apricot Glazed Baked Chicken.
