Apple Pie Oatmeal Bars

2 cups rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

1 tsp ground cinnamon

1/2 tsp nutmeg

1/2 tsp salt

1 tsp baking powder

1 cup apple sauce (unsweetened)

1 cup diced apples (about 2 medium apples)

1/2 cup walnuts or pecans, chopped (optional)

1 tsp vanilla extract

1 tbsp lemon juice

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, ground cinnamon, nutmeg, salt, and baking powder. Stir until well mixed.

      Prepare Wet Mixture: In a separate bowl, mix together the melted butter, apple sauce, diced apples, vanilla extract, and lemon juice. Stir until the ingredients are well combined.

        Combine Ingredients: Gradually fold the wet mixture into the dry mixture until just combined. If you're using chopped walnuts or pecans, gently fold these in as well.
