Apple Cinnamon Yogurt Loaf

1 ½ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

1 tsp ground cinnamon

½ tsp salt

½ cup unsweetened applesauce

1 cup plain Greek yogurt

½ cup granulated sugar

¼ cup brown sugar, packed

2 large eggs

¼ cup vegetable oil

1 tsp vanilla extract

1 large apple, peeled and diced (preferably Granny Smith)

½ cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. This will help to evenly distribute the rising agents and spices.

      Combine Wet Ingredients: In a large mixing bowl, combine the applesauce, Greek yogurt, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Whisk together until the mixture is smooth and well combined.

        Incorporate Dry Ingredients: Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Mix until just combined; do not overmix. The batter should be slightly lumpy but without large flour pockets.

          Add Apples and Nuts: Gently fold in the diced apple and nuts (if using) until evenly distributed throughout the batter.

            Pour into Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula for an even bake.

              Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean. If the top begins to brown too quickly, cover with aluminum foil for the last 10-15 minutes of baking.
