Ingredients

For the Cupcakes:

1 1/2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

3/4 cup whole milk

1 medium apple, peeled and finely diced

For the Cinnamon Filling:

1/2 cup brown sugar, packed

2 tablespoons ground cinnamon

3 tablespoons unsalted butter, softened

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard cupcake tin with cupcake liners.

Prepare the Cinnamon Filling: In a small bowl, mix the brown sugar and cinnamon together. Set aside.

Mix the Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg.

Combine the Wet Ingredients: In another bowl, cream together the softened butter and granulated sugar until fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined, then fold in the diced apples.

Fill Cupcake Liners: Spoon the cupcake batter into the prepared cupcake liners until they are about 2/3 full.

Add Cinnamon Filling: Sprinkle about 1 teaspoon of the cinnamon filling on top of each cupcake batter before using a toothpick or skewer to swirl it gently into the batter.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Prepare the Cream Cheese Frosting: In a medium bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar, mixing until well combined. Stir in the vanilla extract. If the frosting is too thick, add milk one tablespoon at a time until you reach your desired consistency.

Frost the Cupcakes: Once cupcakes are completely cool, generously pipe or spread the cream cheese frosting on top. For an extra touch, garnish with a sprinkle of cinnamon and small apple slices if desired.

Serve and Enjoy: These delightful Apple Cinnamon Roll Cupcakes are perfect for a cozy treat or a special occasion. Enjoy your sweet creation!
