Ingredients

2 cups rolled oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

2 cups unsweetened almond milk (or milk of choice)

1/4 cup maple syrup or honey

2 large eggs

2 tablespoons melted coconut oil (or butter)

2 medium apples, peeled, cored, and diced (about 2 cups)

1/2 cup chopped walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

Extra cinnamon and maple syrup for drizzling (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch (or similar) baking dish with cooking spray or a bit of oil.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir well to ensure the baking powder is evenly distributed.

Prepare Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup (or honey), eggs, and melted coconut oil until well combined.

Combine Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is fully incorporated. Gently fold in the diced apples, chopped walnuts, and raisins if using.

Bake: Pour the mixture into the prepared baking dish, spreading it evenly. Bake for 30-35 minutes or until the oats are set and the top is lightly golden.

Cool and Serve: Let the oatmeal bake cool for about 10 minutes before slicing. Serve warm, drizzled with extra cinnamon and maple syrup if desired.

Storage: Once completely cooled, you can store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat individual portions in the microwave before serving.
