Ingredients

1 cup marinated artichoke hearts, drained and chopped

1 cup cherry tomatoes, halved

1 cup Kalamata olives, pitted and halved

1 cup roasted red peppers, sliced

1 cup salami, cut into strips

1 cup fresh mozzarella balls, halved

½ cup red onion, thinly sliced

1 cup fresh basil leaves, torn

½ cup extra virgin olive oil

¼ cup red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

Fresh arugula or mixed greens (for serving)

Instructions

Prep the Ingredients: Start by gathering all your ingredients. Ensure all canned or jarred items are drained and rinsed as needed. Chop or cut items into bite-sized pieces for easier eating.

Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.

Combine Salad Ingredients: In a large mixing bowl, add the chopped artichokes, cherry tomatoes, Kalamata olives, roasted red peppers, salami, mozzarella balls, and red onion. Gently toss to mix all ingredients evenly.

Dress the Salad: Pour the prepared dressing over the salad mixture and toss gently until everything is well-coated with the dressing.

Add Fresh Herbs: Incorporate the torn basil leaves into the salad, folding them in gently so that they distribute throughout without tearing too much.

Serve: On a large serving platter or individual plates, layer a bed of fresh arugula or mixed greens. Spoon the antipasto salad mixture on top of the greens.

Garnish and Enjoy: Drizzle any leftover dressing over the salad if desired, and finish off with a few extra basil leaves for garnish. Enjoy this refreshing and robust salad as a starter or a main dish!
