Almond Joy Oat Bites

Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or coconut-flavored nut butter)

1/4 cup honey or maple syrup

1/4 cup unsweetened shredded coconut

1/4 cup chopped almonds

1/4 cup dark chocolate chips (dairy-free if needed)

1 tsp vanilla extract

1/4 tsp sea salt

Instructions
 

Mix Dry Ingredients: In a large bowl, combine the rolled oats, shredded coconut, chopped almonds, and sea salt. Stir until evenly mixed.

    Combine Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

      Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Mix thoroughly until all ingredients are well incorporated, and everything is sticky.

        Chocolate Addition: Gently fold in the dark chocolate chips, making sure they are evenly distributed throughout the mixture.

          Form the Bites: Using your hands, scoop out small amounts of the mixture and form them into bite-sized balls, about 1 inch in diameter. You should get around 12-15 bites.

            Chill: Place the oat bites on a parchment-lined baking sheet or plate. Refrigerate for about 30 minutes to firm up.

              Store & Enjoy: After chilling, transfer the Almond Joy Oat Bites to an airtight container. They can be stored in the refrigerator for up to a week or frozen for longer.
