1.5 pounds baby potatoes, halved or quartered

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Rinse the baby potatoes under cold water and cut them in half or quarters depending on their size. For even cooking, try to keep the pieces roughly the same size.

    Make the Seasoning Mix: In a large mixing bowl, combine olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Mix well until the garlic is evenly distributed.
