2 medium zucchinis, sliced into 1/4 inch rounds

1 cup all-purpose flour

2 large eggs, beaten

1 cup seasoned breadcrumbs (or panko for extra crunch)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil spray

Instructions
 

Prepare the Zucchini:

    - Wash and slice the zucchinis into even 1/4 inch thick rounds. Pat them dry with a paper towel to reduce moisture.

      Set Up the Bread Station:

        - In one shallow bowl, add the flour, seasoned with a pinch of salt and pepper.

          - In a second bowl, beat the eggs until frothy.

            - In a third bowl, combine the seasoned breadcrumbs, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, and paprika.

              Bread the Zucchini Rounds:

                - Dredge each zucchini round in flour, shaking off any excess.

                  - Dip it into the beaten eggs, making sure it's fully coated.

                    - Finally, coat the round in the cheese and breadcrumb mixture, pressing gently to ensure it sticks well. Repeat until all rounds are coated.

                      Preheat the Air Fryer:

                        - Preheat your air fryer to 375°F (190°C) for about 5 minutes. This step is crucial for achieving crispy and golden rounds.

                          Air Fry the Zucchini:

                            - Lightly coat the air fryer basket with cooking spray.

                              - Place the zucchini rounds in a single layer in the air fryer without overcrowding (you may need to do several batches).

                                - Spray the tops of the zucchini rounds with a light mist of cooking spray for extra crispiness.

                                  - Air fry for 10-12 minutes, flipping halfway through, until the rounds are golden brown and crispy.

                                    Serve:
