2 salmon fillets (about 6 oz each)

2 cups broccoli florets

1 bell pepper (red or yellow), sliced

1 medium carrot, julienned

1 cup snap peas

3 tablespoons vegetable oil (divided)

3 tablespoons teriyaki sauce (plus extra for serving)

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon sesame seeds (optional, for garnish)

Cooked white or brown rice, for serving

Green onions, chopped (for garnish)

Instructions
 

Prepare the Ingredients: Start by washing and chopping all the vegetables. Slice the salmon fillets into bite-sized pieces.

    Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the salmon pieces and cook for about 3-4 minutes, stirring occasionally until the salmon is golden and cooked through. Remove from the skillet and set aside.

      Stir-Fry the Veggies: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant. Then, add the broccoli, bell pepper, carrot, and snap peas. Stir-fry the vegetables for about 5-7 minutes until they are tender but still crisp.

        Combine and Flavor: Return the cooked salmon to the skillet with the veggies. Drizzle the teriyaki sauce over everything and gently stir to coat the salmon and vegetables evenly. Cook for an additional 2-3 minutes to warm through.

          Serve: Serve the teriyaki salmon and veggie stir-fry over a bed of cooked rice. Drizzle with extra teriyaki sauce if desired and sprinkle with sesame seeds and chopped green onions for garnish.
