1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon vegetable oil

1 cup bell peppers, diced (use a mix of red, yellow, and green for color)

1 cup pineapple chunks (fresh or canned)

1 cup broccoli florets

1 tablespoon ginger, minced

2 cloves garlic, minced

1/4 cup soy sauce (low-sodium preferred)

1/4 cup rice vinegar

1/4 cup brown sugar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Cooked jasmine or brown rice, for serving

Green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Stir-fry the Chicken: In a large skillet or wok over medium-high heat, heat the vegetable oil. Add the chicken pieces and stir-fry for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove chicken from the skillet and set aside.

    Sauté Veggies: In the same skillet, add the diced bell peppers and broccoli florets. Stir-fry for about 3-4 minutes until they start to soften. Add the minced ginger and garlic, cooking for an additional 1-2 minutes until fragrant.

      Make the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, and brown sugar. Pour this mixture into the skillet with the vegetables, and stir to combine.

        Add Chicken and Pineapple: Return the cooked chicken to the skillet along with the pineapple chunks. Stir everything together until evenly coated.

          Thicken the Sauce: Pour the cornstarch slurry into the skillet, stirring continuously as the sauce thickens. Cook for another 1-2 minutes until the sauce is glossy and coats the chicken and veggies well.
