Ingredients

2 cups cooked jasmine rice (preferably day-old)

1 cup large shrimp, peeled and deveined

1 cup frozen peas (thawed)

2 tablespoons vegetable oil

2 eggs, lightly beaten

3 green onions, thinly sliced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and pepper to taste

Lime wedges, for serving (optional)

Instructions

Prep the Ingredients: If you haven't done so already, cook the jasmine rice ahead of time. Day-old rice works best as it prevents clumping during frying. Thaw the peas by running them under warm water.

Cook the Shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and season lightly with salt and pepper. Sauté for 2-3 minutes until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

Scramble the Eggs: In the same skillet, add another tablespoon of oil. Pour in the beaten eggs and scramble until just set, about 1 minute. Remove the scrambled eggs and set aside with the shrimp.

Sauté the Aromatics: Add the minced garlic and sliced green onions to the skillet. Sauté for 30 seconds until fragrant, making sure not to burn the garlic.

Combine Rice and Peas: Add the cooked jasmine rice to the skillet, breaking apart any clumps. Stir-fry for 2-3 minutes until the rice is warmed through. Then, add the thawed peas, stirring to combine.

Flavor the Rice: Return the shrimp and scrambled eggs to the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together, ensuring even coverage of the sauces, for another 2-3 minutes.

Finalize and Serve: Taste and adjust seasoning with salt and pepper if desired. Serve the shrimp fried rice hot, garnished with extra sliced green onions and lime wedges on the side for an added zing.
