1 pound large shrimp, peeled and deveined

2 medium zucchinis, spiralized into noodles

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Juice and zest of 1 lemon

1/4 cup chicken or vegetable broth

Salt and pepper to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving (optional)

Prep the Zucchini: Start by spiralizing the zucchinis into noodles. If you don’t have a spiralizer, you can use a vegetable peeler to create ribbons. Set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side, until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Cook the Garlic: In the same skillet, add the remaining tablespoon of olive oil and reduce the heat to medium. Add the minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant—be careful not to burn the garlic.
