Ingredients

8 ounces fettuccine or spaghetti

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup chicken broth (or vegetable broth)

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Juice of 1 lemon

Freshly grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant (be careful not to burn the garlic).

Combine Ingredients: Pour in the chicken (or vegetable) broth and add the halved cherry tomatoes. Bring the mixture to a simmer and let it cook for about 2-3 minutes until the tomatoes soften slightly.

Toss the Pasta: Add the drained pasta to the skillet, along with the cooked shrimp. Pour in some reserved pasta water (start with 1/4 cup and add more if needed) and squeeze in the lemon juice. Toss everything together gently until well combined.

Finish and Serve: Remove from heat. Stir in chopped parsley and adjust seasoning with salt and pepper if needed. Serve the pasta warm, garnished with freshly grated Parmesan cheese.
