30-Minute Creamy Tuscan Shrimp Pasta

8 ounces fettuccine or pasta of choice

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Lemon wedges for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side or until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

        Make it Creamy: Lower the heat and stir in the heavy cream, allowing it to simmer gently for 2 minutes. Sprinkle in the grated Parmesan cheese and Italian seasoning, stirring until the cheese has melted and the sauce is creamy. If the sauce is too thick, gradually add the reserved pasta water until you reach the desired consistency.

          Combine: Add the fresh spinach and cooked shrimp back into the skillet. Toss to combine and cook for another 1-2 minutes until the spinach has wilted.

            Mix with Pasta: Add the drained pasta to the skillet and toss everything together until well coated in the creamy sauce. Taste and adjust seasoning with more salt and pepper if necessary.

              Serve: Plate the creamy Tuscan shrimp pasta and garnish with fresh basil. Serve with lemon wedges on the side for an extra burst of flavor if desired.
