8 oz (225g) mushrooms, sliced (preferably cremini)

5 oz (140g) fresh spinach (about 4 cups)

1 cup heavy cream (or coconut milk for a lighter option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan version)

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a kick)

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta:

    - In a large pot of boiling salted water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.
