30-Minute Cheesy Chicken Enchiladas for Families

Ingredients
  

2 cups cooked shredded chicken (rotisserie chicken works great)

1 cup of mild salsa

1 cup of sour cream

1 cup of shredded cheddar cheese

1 cup of shredded Monterey Jack cheese

8 medium flour tortillas

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large bowl, combine the shredded chicken, salsa, sour cream, cumin, chili powder, garlic powder, onion powder, and half of the cheddar and Monterey Jack cheeses. Mix well, ensuring all ingredients are well combined. Season with salt and pepper to taste.

      Warm the tortillas briefly in a microwave (about 30 seconds) or on a skillet to make them pliable.

        Assemble the enchiladas: Place about 1/4 cup of the chicken mixture in the center of each tortilla, then roll it up tightly. Place the rolled enchiladas seam side down in a 9x13 inch baking dish.

          Top the rolled enchiladas with any remaining salsa and sprinkle the rest of the shredded cheese on top.

            Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

              Remove from the oven and let cool for 5 minutes before serving.

                Garnish with chopped cilantro and sliced jalapeños, if desired. Serve with additional salsa or sour cream on the side.
