1 lb (450g) boneless, skinless chicken thighs, diced

1 cup jasmine rice

2 cups water or chicken broth

1 cup broccoli florets

1 bell pepper, sliced (red, yellow, or orange)

1 medium carrot, julienned

¼ cup teriyaki sauce (store-bought or homemade)

2 tablespoons vegetable oil (for cooking)

1 teaspoon garlic, minced

1 teaspoon fresh ginger, minced

1 green onion, thinly sliced (for garnish)

1 teaspoon sesame seeds (for garnish)

Salt and pepper, to taste

Instructions
 

Cook the Rice: In a medium saucepan, combine the jasmine rice and water (or broth). Bring to a boil over high heat, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Once done, fluff with a fork and set aside.
