2 cups rolled oats

1 cup pumpkin puree

1/2 cup almond butter (or any nut butter of your choice)

1/2 cup honey or maple syrup (for vegan option)

1/4 cup brown sugar (packed)

1 teaspoon vanilla extract

1 teaspoon pumpkin spice (or a mix of cinnamon, nutmeg, and ginger)

1/2 teaspoon salt

1/2 cup chopped nuts (walnuts, pecans, or almonds)

1/2 cup dried fruit (cranberries, raisins, or chopped dates)

1/2 cup mini chocolate chips (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides to easily lift the bars out later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), brown sugar, and vanilla extract. Stir well until everything is fully incorporated and smooth.

      Add the Dry Ingredients: To the same bowl, add the rolled oats, pumpkin spice, and salt. Stir until the dry ingredients are evenly coated with the wet mixture.

        Incorporate Add-ins: Gently fold in the chopped nuts, dried fruit, and mini chocolate chips (if using). Ensure all ingredients are well distributed throughout the mixture.
