4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened

1 clove garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon dried oregano

2 tablespoons olive oil

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, salt, black pepper, and dried oregano. Mix well until all ingredients are thoroughly blended.

      Prepare the Chicken: Place each chicken breast between two pieces of plastic wrap and gently pound them to an even thickness (about 1/2 inch) using a meat mallet. This helps ensure even cooking.

        Stuff the Chicken: Take an equal portion of the spinach and feta filling and place it in the center of each chicken breast. Be careful not to overstuff. Fold the sides of the chicken over the filling and secure it with toothpicks or tie with kitchen twine to hold it in place.

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts, cooking for about 4-5 minutes on each side until golden brown.

            Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (165°F or 75°C internal temperature). If desired, sprinkle the grated Parmesan cheese on top during the last 5 minutes of baking for added flavor.
